One of my top travel bucket list destinations to visit is Norway as I long to cruise along the spectacular Norwegian Fjords and see the Northern Lights. In fact my Mum has a cruise booked for November and I may be slightly envious.
Inntravel who specialise in slow, self guided holidays which reveal the lesser-taken path of countries in Europe and beyond are currently promoting winter holidays to Norway and challenged me to cook the traditional Norwegian dish Fårikål.
Fårikål (pronounced ‘forrycoal’) and translated as ‘sheep in cabbage’, is typically served in early autumn. Originating from Western Norway it is now loved all over the country and consists of pieces of mutton or lamb on the bone, cabbage and whole black peppercorns.
Ingredients:
0.75-1 kg of lamb shoulder, shank, or brisket
0.5 l of water
1 cube of beef broth
1 bay leaf
10 black peppercorns
1 small cabbage head, cut into wedges
Salt to taste
Fresh parsley
Method:
1) Seal the meat by frying it lightly in butter.
2) Add it to a pot and season.
3) Add the water, peppercorns, bay leaf and stock cube as well as the cabbage, and boil under a lid for 50-60 minutes.
4) When serving, pour the pan juices over the top of the lamb – you should have a rich, hearty lamb broth.
5) Garnish with fresh parsley and serve with boiled potatoes and thin, crisp flatbread with lingonberry jam or pickles.
I did manage to find some flatbread but the staff in the local supermarket looked at me funnily when I asked if they stocked lingonberry jam and pickles, so we didn’t have that to accompany the dish, but it didn’t matter.
I was concerned that with so few ingredients that it would be quite a bland dish, but the peppercorns gave it a bit if a kick and the flavour of the lamb shone through. My cabbage wedges did fall apart so it didn’t look a pretty as the pictures but it still tasted good.

I happen to be Norwegian, so this dish I know extremely well. I just have to point out though that there is NOTHING like “10 full black pepper corns” you just throw a handfull in there and then you serve it with it all. 😀 hehehe
I don’t know if it’s what you meant (or even wrote, I didn’t quite understand it) but you stack the cabbage on top of the lamb every other layer if you know what I mean all the way to the top of the pot. 😀 And then you put the lid on and just…wait in agony for it to finish because it smells so good! haha Depending on how many people you serve, you might need more than one cabbage. 😀 And don’t forget to leave the lamb on the bone, the marrow is fantastic to slurp. hehe
