ChelseaMamma’s Chilli Chips

We are creatures of habit in our house and Saturday night means one thing…….Steak and Chilli Chips.

I have tweeted my love of this dish before and people keep asking for the recipe, so here it is.

I have used Desiree potatoes, but Maris Piper work equally well.

Ingredients:

Potatoes
Olives Et Al Chilli & Paprika Oil (you can use plain Olive Oil but this has added punch)
Chilli Flakes

Method:

1.  Pre-heat oven to 220C, sprinkle some oil in a roasting tin and pop in the oven to heat

2.  Halve the potatoes and halve again so you have chunky wedges

3.  Add the potatoes to a pan of boiling water, bring back to the boil.  Simmer for 3 minutes

4.  Drain the potatoes, and add them to the heated roasting tin (beware of the hot oil as it may spit)

5.  Sprinkle more oil over the top of the chips and give the tray a shake to make sure they’re   evenly spaced and have had a light coating of oil on each chip.

6.  Sprinkle chilli flakes over the chips and put back in the oven to bake for 20 minutes.  You can add as many or as few as you like, depends on your taste.

7.  Take out the oven once golden and serve.

The chips work well with steak, chicken and other meat dishes.
